Well friends, I made up for the prior weekend’s purposeful antisocial agenda by emerging from my cocoon as a full-fledged social butterfly this weekend. Celebrating a friend’s birthday at The Foundry, treating Lydia’s cousin to a one-night version of the Dallas Experience (drinks overlooking the skyline at NYLO followed by
late-night early morning Velvet Taco), hot dogs behind home plate at a Rangers game, North Park shopping and a Teavana splurge followed by Rusty Tacos with a visiting Fort Worth friend, Sunday brunch with Lydia and our loverly friends…whew.
I’ve also recently become a tad addicted to Instagram as of late so you can even see the discrepancy for yourselves.
Which leads me to the below recipe, found at Sarah Bakes Gluten Free Treats. It was pretty delicious while, like all things gluten-free/vegan baking, pretty trial and error. For example, I subbed Bob’s Red Mill baking flour for her flour blend in an effort to be financially and time efficient (read: cheap and lazy). This led to more of a cupcake-like batter consistency than cookie-like, resulting in a first round of very flat, wide wanna-be “scones.” Using only about 2/3’s of the called for coconut milk and adding in a little more flour definitely helped the next time around!
- 1 3/4 cups Sarah’s gluten free flour blend (Or in my case, Bob’s Red Mill gluten-free all-purpose baking flour)
- 1/2 cup organic cane sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 5 tablespoons Earth Balance vegan butter, chilled
- 1/2 cup So Delicious unsweetened vanilla coconut milk (For me: 1/3 cup)
- 1 cup fresh strawberries, diced (Even more is better!)
- 1 cup organic powdered sugar
- 2 tablespoons So Delicious barista style coconut milk french vanilla coffee creamer
They ended up being a pretty big brunch success, and testing two batches means I get to start my mornings all week long with baked sweetness I can actually eat. We also enjoyed White Peach Gin Fizz cocktails, which fit my gin phase and peach craving quite nicely. So nicely in fact, that I forgot to take a picture in all the excitement of actually drinking them so you’ll just have to take my word for it or try the recipe out for yourselves…
I had a ridiculous lazy time last week and like Sarah, finished an entire box of Mac ‘n Cheese all on my own. In my defense, it was Annie’s – practically healthy right?
Win at phone tag. While blissfully signing my adorable Valentines last week, I realized that several of these long distance friendships that I cherish hadn’t been receiving much TLC as of late. I’m not much of a phone talker. And the fact that my iPhone is on the fritz and the screen doesn’t lock when I hold it up to my cheek certainly isn’t doing me any favors. I prefer to do all my phone catch ups while I’m driving (dangerous) or walking my dog (windy). I absolutely hate talking on the phone in my apartment, unable to accomplish anything else on my to do list. This week I need to just get over it. Good friends are hard to find and hard to keep if you don’t make a valiant effort to reach out. So get ready AT&T, I’m actually going to use all those minutes you give me.
Read, dangit. Like Sarah, I have a book that’s been hanging over my head for months. With several books in the pipeline, I need to hunker down and actually read the thing. I mean, it’s a great book! But I so easily get distracted by emails, blogs and Gawker (guilty pleasure) that by the time my head hits that pillow, it’s lights out for me.
Speaking of lights out. Last week I put myself through a terrible sleep cycle with going to bed after midnight and waking up between 4 and 5 AM. Luckily, I love coffee and will take an excuse to drink more of it, but I know this isn’t good for my mental or physical health. Plus, I was so pooped by Friday night I stayed in with just The Avengers and my pup (oh, and my mac and cheese). So this week I want to work on getting in bed at a reasonable hour. Hopefully this will play into the reading goal as well!
Make it into a headstand. As you may or may not know, I’m a yoga addict. They have me hooked. And I am SO close to being able to get that handstand! All I can really do is try my absolute hardest and practice focus. I also plan on staying super hydrated all week in preparation for Saturday’s workshop class where I get to do some handstand practice. Wish me luck!
The tulips featured above, by the way, have absolutely nothing to do with this post. In the community I live in though, the city is planting them EVERYWHERE and I am loving it! They’re so cute how they open during the day, face towards the sun, and close up at night. The added array of colors is like a real live rainbow everyday of the week. I just can’t get over them!

I spent a slow-paced Sunday with a friend in downtown McKinney, an adorable area that looks like it belongs in a movie about a charming small town. Couples walked hand in hand, kids rode by on bicycles laughing as the wind blew in their hair. Literally. I thought I should probably take some pictures to prove it, but turning the camera on strangers made me feel a little on the creeper side. So you’ll just have to take my word for it.
I’ve been down there (or up there, rather, as it’s about 35 minutes north of Dallas) before for the occasional wedding or client meeting, but this was the first time I finally had time to explore. After stuffing ourselves with mimosas, caffeine, eggs benedict and deep conversation, we wandered into one vintage treasure shop after another.
Our afternoon reminded me how much I have to be thankful for…Some people just make your soul richer, and this girl is definitely one of those. We’ve both come a long way personally, romantically and professionally since we first met one year ago. Sometimes seeing that growth in others is easier than seeing it in yourself, and having friends to witness that growth in (and remind you of your own) is a beautiful thing! This week I’m making an effort to hold on to that encouragement and reach out to some friends I’ve been meaning to connect with. I even picked up some cute notecards at one of the shops to help me get started.
